An exceptional evening at Under Grain
The third Wine & Dine evening at our MICHELIN star restaurant, Under Grain took place in Valletta on Thursday, 9th July. Guests were welcomed for an evening of refined dining at Under Grain, located on Merchants Street, for an elegant tasting menu and a curated selection of wines.
Esteemed guests were treated to a welcome drink as they mingled and networked with other guests. In collaboration with ‘WORLD OF WINES by Charles Grech’, the wine was explained before the dinner by Alberto Bafumi, Wine & Water Brand Manager of Charles Grech.
The menu, specially crafted for the occasion, consisted of five courses paired with different fine wines from Italy and France. To start, guests were treated to a selection of snacks, followed by variations of local tomatoes, burrata, smoked almond praline and dashi jelly. The two main courses consisted of Nitsume glazed line-caught fish, risotto of king oyster mushrooms and hazelnuts and roasted fillet of black Angus beef. The evening ending with a salt-baked pineapple, seaweed ice cream, marmite, and caramel syrup and petit fours. The wines included Frescobaldi Millesimato 2019 Metodo Classico (Trento DOC), Frescobaldi Alie Rose’ 2019 IGT (Toscana), Domaine Louis Moreau Chablis 1er Cru Vaillons 2018 (Burgundy) and Frescobaldi Nipozzano Chianti Rufina Riserva (DOCG 2016). At the end of the evening, dessert was paired with a glass of Cheval Quancard Lafleur Mallet Sauternes 217 from Bordeaux, France.
