The elegant event paired great wine and great food at Rosselli – AX Privilege
On Thursday 10th October, the recently-opened Under Grain restaurant in Valletta hosted an intimate wine pairing event, inviting guests to gather and mingle at its unique venue. The wine pairing event was organised in collaboration with Cleland & Souchet, who provided a range of top-quality wines by Giusti Vini.
Guests made their way to Merchants’ Street in Valletta, and were greeted with an exquisite cocktail as they entered Under Grain. The calming environment of the restaurant provided the ideal space for guests to chatter and network, before indulging in a delicious 5-course meal, tied in with a selection of wines.

The menu for the evening, curated by Under Grain’s brigade of chefs, started off with a selection of snacks and Asolo Prosecco Superiore DOC Extra Dry, followed by a Tartare of wild sea bass and oyster Chantilly paired with Chardonnay delle Venezie IGT ‘Dei Carni’. Next, guests were treated to a slow roasted rump of milk-fed veal with pickled clams, bagna cauda and vin jaune, paired with a glass of Valpolicella Ripasso Superiore DOC. Dessert consisted of a divine baked white chocolate cheesecake and passionfruit sorbet, together with a glass of Prosecco DOC Spumante Extra Dry ‘Rosalia’.
Finally, guests rounded up their evening by enjoying a selection of coffees, petit fours and Grappa.
