In an era of companies looking to automate and possibly bypass human intervention, we opened Grain to honour the marvellous skills that we have as a human race.
At street level, Grain offers a casual dining experience with small plates to share and no set rules. All wines here are served by the glass. Downstairs a different concept has been created. In fact, Under Grain gives you the opportunity to immerse yourself into an environment of informal luxury and enjoy a more refined experience.
Set in a palazzo in the heart of Valletta and built in the 17th century, Grain is inspired by the trade of a tailor which is full of analogies when compared to a restaurant. We source the best possible materials to make sure our end result is of the highest quality. We both use several tools to achieve this and we have several processes required to achieve the end result.
The greatest analogy though is the importance of the skilled people that are working to deliver this experience. Just like a tailor and his team, our people must have the skill and dedication to delight our guests and make the best use of the ingredients that we carefully source.
Cutting fabric along the grain is a detail, and when we entertain our guests, it is this detail that we are after.
