Rare Bordeaux wines to feature in Under Grain’s upcoming gourmet event

The talented kitchen brigade at the Michelin-starred Under Grain has been busy crafting an exciting menu for A Taste of Bordeaux. This exclusive food-and-wine pairing event, held on the 24th of February, will celebrate contemporary French cuisine and Bordeaux viticulture in all their glory.

 

Organised in collaboration with Farsonsdirect, the event will see expert French sommelier Jean de Lassee fly in to host this magnificent evening. As a seasoned négociant for Ulysse Cazabonne—a Chanel-owned wine merchant based in Margaux with close links to many top Châteaux—Jean de Lassee is intimately knowledgeable about winemaking in Bordeaux, a region renowned for its full-bodied wines which develop beautiful aromatics with age. The sommelier will guide diners through the rich characteristics of each Bordeaux vintage expertly chosen to enhance the flavours and textures of executive chef Victor Borg’s signature dishes.

 

“It’s a true pleasure to work with a chef of Victor’s calibre,” explains Jean de Lassee. “Cuisine of this class deserves truly excellent wine and, together with the Farsonsdirect team, we’ve sourced an iconic selection of rare Bordeaux vintages from the 2000s, the majority of which are being shipped over from France exclusively for this event. I look forward to exploring the fascinating intricacies of wine tasting with our diners over the course of this much-anticipated gourmet event.”

 

On the evening, guests will be welcomed with a glass of Champagne Bertrand-Delespierre together with a selection of gourmet snacks. The five-course menu will commence with a heavenly white crab dish served with pickled radish and oyster, paired with a Château Smith Haut Lafitte Blanc 2017. The plin of duck confit is twinned with a Pauillac de Latour 2011, and guests will enjoy contrating two exquisite reds, a Chateau Canon 2000 and a Chateau Rauzan Segla 2000, to wash down their slow cooked loin of Welsh lamb with togarashi, globe artichokes, and cherry.

 

Chef Victor’s famed white chocolate cheesecake will make a triumphant return and is perfectly complemented by a Chateau Coutet 2011. This medium-bodied dessert wine with exceptional balance reveals refreshing traces of apricot and white peach, before closing on a thrillingly fruity tang. Coffee and petit fours will close out the night.

For this event, we have experimented with an array of top-grade Bordeaux wines to showcase new combinations of flavours. I can’t wait for diners to experience the contrasting sensations we have in store for them. The bright, floral notes of the Chateau Canon with our blend of togarashi spices in the Welsh lamb is sensational. It’s a truly extraordinary pairing,” says Victor Borg, Executive Chef at Under Grain.
